Because of the flexability that it gives, I am a big fan of having a bunch of blankets in my tack compartment.  I found a wool blanket liner for a reasonable price a number of years ago.  I just put this under whatever other blankets I feel I need and remove the liner to let it dry later.
 
Wool blanket liners can be made from surplus wool blankets (I just noticed a bunch on sale at a Missoula discount outdoors store, so I assume that other areas have them also), or purchased for a reasonable price.  The one I have is made from shoddy.  (Shoddy, is reprocessed wool fibers.  It became used to referr to inferior goods as a result of the Civil War.  Some Union uniforms were made, against specification, from shoddy.  They fell apart, so the troops started using it as a general term.) 
 
If you want an ultimate layer next to the skin, look into mesh anti fly coolers. 
 
Anyway I have all sorts of coolers, blankets, and liners.  On cold rainy rides our horses end up with many layers of stuff, that is gradually removed as they cool out.
