I was thinking more along the lines of a general sort of voice over.  More
like:

"Whathisname and Jane rider have come in to the vet check.  They have 30
minutes to reach pulse level of 64.  It could be tight."  Cut to post ride
interview "Whatsi was pulsing really high, the canyon climb really took it
out of him, and I wasn't sure if we could get his pulse down"  Cut "at the
back...."

The problem I see is that it would be labor intensive.  You need people to
go around filming the ridecamp, vet checks, tough areas of the trail, doing
interviews, etc.

PS: I wouldn't have someone follow the riders so much as just have cameras
along the trail where the riders come up to them.

Yes, good suggestion.  They can also show shots of the grooming area where
there is frantic activity with a clock ticking off the minutes ... "Will he
make it to the vet on time?  Folks, I can hardly watch, the tension is too
much for me .... Bob, let me know if he makes it in his allotted time ....
my nerves!  Oh my goodness, number 215, Jane Smiley, is having a hard time
keeping up with her horse at the trot-out and her groom is running behind
her throwing sodden sponges at her ... what a team, what a team!  If only
you can feel the electricity in the air!  Bob, I think I'll go and have  a
lie-down now, all this excitement is getting to me!"
