Other thing guaranteed to give me headaches is not eating a really good
breakfast that is high in protein (eggs). If I miss my protein, I can get
blood sugar slumps, and get really headachy and even shaky and dizzy.  I
always carry, in my fanny pak, Tiger Mike bars, which are a very
cost-effective source of protein.  ONe of those always picks me up.

To echo what others have said already, you are probably dehydrated and
need to drink more water, sport drink, or juice.   I now use the
CamelBak hydration method because reaching down for the water bottles
while riding, and then sliding the bottles back into their holders was
too much effort.  I ended up not drinking often enough.
