Jon has no problem eating with a bit in his mouth.  He has no problem eating
with a muzzle on.  Jon can find grass in a field of concrete.  Jon simply
has no problem eating.

So, NO, you are not alone.

difficulty whatsoever eating and drinking with bits in their mouths?

I have yet to have a horse that had any difficulty learning this trick
within about 10 minutes of trying.

I find, in fact, the drinking (and eating from a bucket) is MORE difficult
with an S Hackamore (or any other shanked piece of equipment) than with a
regular snaffle...since the shanks are more likely to get hung up on the
edge of whatever it is they are trying to get their nose in to.

There may be reasons for wanting to use a bitless piece of equipment, but
easier to eat and drink is not one of them...

....at least not for my horses.

A bit that interferes with a horse's teeth and/or tongue is not fit
properly.
