But I don't think there's any difference. I seem to recall that meat from many of the horses slaughtered in the US goes to Europe...I'd guess that the less marketable parts go into pet food. To the best of my knowledge, the regs for horse transport for slaughter do not vary according to what species will be consuming the meat. And you're correct that a great deal of it goes to Europe. European consumption of horse meat went up when the mad cow disease situation was so out of control. And I may be wrong, but I'm under the impression that some also goes to Asia.
