Dear Carla;
I think your husband was probably a bit apprehensive about riding that
day and the horse picked it up.  She felt it as fear, and so was fearful
herself.  Horses, arabs in particular, and sometimes(IMO)mares even more
in particular, are very sensitive to their rider's every thought. 
Thoughts come through as body language, especially tension, which is
directly transmitted to them.  If the rider is holding a bit of tension
in their body it makes the horse fearful.  That, combined with the lack
of riding, with the cooler weather so they feel friskier, is probably
the problem.
I would find a simpatico trainer to work with your husband and the horse
together.  When your husband and the horse learn to trust each other,
and he learns the "controls" for the horse initimatly, they will be
better.   I know that when I ride a new horse for the first few times, I
have apprehension that I work really hard to release so it cannot
transfer to the horse.
