First, if anyone is interested in riding around the Tahoe Rim Trail -
Heritage Trails will be conducting this ride for the 5th time in 18 years.
Average pleasure ride speed and 15-20 miles a day. Challenge is moving camp
every day. One day rest by a lake. Start at Echo Summit and end at Echo
Summit. Ride through Desolation Wilderness and other heavenly Sierra view
points. Camp outside of the wilderness. Catered for horse and rider. Cost
$850. 10 days of riding.

>Pecan Tassies
>
>Prep time 30 minutes, Bake 30 minutes Oven 325 degrees.
>
>1/2 cup butter softened
>1 3-oz package cream cheese, softened
>1 cup all - purpose flour
>1 egg
>3/4 cup packed brown sugar
>1 tablespoon butter or margerine melted
>1/2 cup chopped pecans
>
>1. For pastry, in a mixing bowl beat the 1/2 cup butter and cream cheese
til combined. Stir in flour. Press a rounded teaspoon of pastry evenly into
the bottom and up the sides of 24 ungreased 1 3/4 inch muffin cups.

>2. For pecan filling, in mixing bowl beat egg, brown sugar, and the 1
tablespoon melted butter til combined. Stir in pecans. Spoon about 1 heaping
teaspoon of filling into each pastry-lined muffin cup. Bake in a 325 oven
about 30 minutes or til pastry is golden and filling is puffed. Cool
slightly in pan. Carefully transfer to a wire rack; cool completely. Makes
24 cookies.
