molasses
Molasses is the syrup byproduct of cane or beet sugar manufacture.
It is a fairly rich in some minerals, particularly potassium, and is
a concentrated energy source. The primary carb contained in molasses
is sucrose [a molecule made of glucose and fructose]. It is
therefore similar to other carbs in that it is easy to digest. Fed
in sufficient amounts it can provide significant energy [3.5 ounces
provides about 250 calories, as compared to a similar amount of
refined sugar which would provide about 380 calories]. Blackstrap
and the darker molasses products are richer in magnesium, calcium and
and potassium as compared to the light molasses.
