traveling west

Well, better late than never...        We are leaving Tuesday, May 26th.
I will be traveling on Interstate 40 west from the East Coast to CA with 2 horses.  Does anyone know good places along the way to stop?  The horses are both easy.  We prefer fair grounds or some  place the horses can move around over night.

Any help or ideas will be appreciated.
