race horse oats

Hello group,
I have a question I thought someone might beable to answer for me. I have a 4yr. old mustang mare that I board here in North Dakota. When the temp drops way below freezing, she is fed race horse oats. I can always tell the next day that she has been fed oats regardless of the weather because of her behavior, she is a very nervous nelly. What I would like to know is (please, in laywoman terms) what is actually happening in her system to produce this reaction? I have singled it out to just these oats because i sometimes feed pellets and dont have this problem. She is fed an excellent hay mix and is well use to good feed she is getting as she has been out of the wild 3yrs now.
