In addition to all of the other suggestions I've seen, I would like to add
that I carry a small mirror (Army issue) which can be used for attracting
search planes. Another good item is Benadryl, if not a "bee sting" kit with
injectable epinephrine for an acute allergic reaction. Be sure you rotate
medications from time to time (replace with fresh). I don't know if I've
seen anyone mention carrying stick matches in a waterproof container,
either.

K Mart carries a cheap camping item that is a combination whistle,
mirror, waterproof matches case, flint, and holds about 20 ft. of
strong cord, dunno what it is called.

I also carry a collapsable rubber bucket in my cantle bag, an
emergency blanket, first aid kits for both rider and horse. Several
years ago on a whim I filled a small bottle with plain alcohol.
Last week I removed a tick from my daughter, and immediately
swapped the area with the alcohol, so it did finally come in
handy.

I also carry flagging tape and a permanent marking pen. You can
use this to leave messages for friends if you have to.
