I've heard you mention this before- how much and how often?

See my longer discussion in reply to Bany Cramer's post.  But the short answer is that you can feed a bunch of beet pulp, up to about half the total forage ration, or about ten-twelve pounds a day dryweight for most horses.  To get the gut motility effect, IMO you would do best to feed it dry, and that's not ideal for horses that are prone to choking.  Very few people have ever had a problem, but if your horse tends to gobble without chewing well, then I'd feed it soaked instead just to be on the safe side.
 
As for how often...shoot, I think beet pulp should be part of the normal ration.
