  Go to any garden store, or garden dept. in a good hardware 
store, and get a soil test kit.  They are generally pretty easy 
to use (or contact your county agricultural extension agent and 
ask where soil samples can be sent for testing).
 
   If you analysis shows you need nitrogen, rotted, composted 
horse manure is great, and chances are you have some!  You can 
mix some into a slurry with water, let sit over night, and use 
a hose-mounted sprayer to spray this 'tea' on your paddock.
 
   If the analsys shows other items needed, check out any book 
(or website)on organic gardening to find organic sources of he 
missing nutrient.  Not all 'organic' fertilizers are non-toxic, 
but most are not to nasty.  Bone-meal, lime, manure and maybe 
some pottash are usually all you need.
