Sounds like you're using St.Croix Eventers in front, and XtraEZ (also made by St.Croix) behind.  These are a good choice of shoe for what you want to do, but my guess is if he's wearing off at the toe, he has too much of it.  I use the Eventers but set them back under the toe a bit to ease breakover, often as far as the white line.  Also, I rocker the toe in front (bend the shoe up at the toe like a ski, or a running shoe) to allow the foot to break over without wearing the toes down really fast.
