I think all our rides here in Michigan provide a meat of some sort and then
everyone brings something for potluck and their own drinks.  Sometimes we
pay extra if we want meat but if we don't, then we don't have to. 
Sometimes it's only hot dogs but the fellowship and fun and trying everyone
else's recipes is fun.  Sure would save a lot of the complaints I've heard
here.  Another suggestion....how about asking a local club (4-H or
Equestrian Team) to run a concession?  Help them make some money and
eliminate the headache of feeding everyone, etc.  Some of our local 4-H
clubs put on some great concessions!!
