A friend of mine has started several older broodmares as riding horses.
My gelding's dam was 12 when she was broke to ride, and is doing seasons
of 300 miles or more (CTR) at 20.  Another mare was just started 2 years
ago at 16, will probably do a full season or close to it next year.
They're having a blast.  As for the weight and "motherly look", I don't
know since we never have problems with broodmares retaining their
bellies after, but they definately look fit these days!
