On the trail...I sponge water on, then hopefully if the mudholes come
regularly I sponge MORE cool water on to wipe away the warm.  If the
mudhole is in the sun and I think the water's warm, I don't throw.

Once the mudholes get dry I use my waterbottles more.  If I could
remember I'd keep ice water to go in them so it would do more good.  I
squirt it with one hand while sort of rubbing it in with the other so
that it doesn't just slide off the surface like a duck's back.  Then,
when I'm out of water I sometimes rough the wet hair up to let more air
in.  

At the Liberty Run they had barrels of water every few 4 miles or so.  I
just jumped off and refilled my bottles from them (made mental note not
to drink it unless desperate) sponged his belly while on the ground,
hopped back on and sponged his neck & chest good before leaving.  When
it's this warm and the water's not really cold I sponge behind the saddle
and around the sides of his belly as low as I can reach too.
