Endurance horses aren't fed less grain than track thoroughbreds to
save money, they are fed less for better health and performance.

Kahlil never got more than four to five pounds of grain a day at any
time in his 17-year and 11,475 mile career (and often less). Well, he
did once, when he'd lost a little weight "on the road" and I upped him
about 50% to try to put it back. He tied up at his next vigorous
exercise (the first time he'd ever done so), and I never made that
mistake again.

That is not atypical. Endurance horses are fed less concentrated feed
than horses in some other disciplines because that is what works for
endurance.
