You have an interesting hypothesis: "Jealousy effects the heart rate in my
horse". Now you have to set out to prove or disprove the hypothesis. First
of all you need at least 3 horses; two that are closely bonded, then a
third one that you introduce and receives attention from the #2 horse.
Then you have to monitor the heart rate of the horse that is left out
("test horse"), and for this you need a stethoscope or a heart rate
monitor. The experiment is fairly simple as follows:
First establish the resting heart rate of the test horse by taking his
pulse for 15 secs (X4 for beats per minute) several times when he is calm
and happy. I would tie up the test horse so the #2 and #3 horses can
interact and make the test horse "jealous".  Then bring the #3 horse into
the scene. Hopefully your test horse will stand still while you take his
pulse.  Record the pulse and compare to the resting pulse.
You should repeat all of the above at least 3 times, preferably 5 or 6
times, to see if you can repeat (reproduce) your results.  A simple
statistical test called the "students T-test" will tell you whether there
is a significant difference between the test horse's resting pulse and
"jealous" pulse (ask your math or science teacher about the test).  If
there is a significant difference you will have supported your hypothesis
and may conclude that jealousy has an effect on the test horse's heart
rate.  Remember that a negative result is OK too.
If you can't set up the above experiment, trying hypothesizing that "My
horse's pulse rate increases when separated from his herd mates". That is
even easier to do and I'm pretty sure you will support the hypothesis. You
can try it on several different horses very easily for repeatable results.
