Since horses suck their water (rather than lap it - like dogs) it is
thoeretically possible to teach them to use a straw or nipple. Exactly
how I'm not sure. But given that you can do this it would mean that you
could in theory also have them drink from a pounch during a ride.

Of course there is always the trick of sticking a sponge in a container
and letting them lick or suck it (they do this for air travel with small
animals). My horses and dogs would most likely eat the sponge.
