My advice: As you go into training, don't allow him to lose weight and be
pleased when he gains. What you want is his body weight to shift to areas
where it will be more useful. If he loses body weight, most of that loss will
be muscle weight.

The hay belly is just a relaxed muscle--like my belly right now. As you go to
work that belly will gradually tuck up as the muscles involved gain tone.
This tone will come much faster will more intense work, but you can't start
out with intense work so ignore the belly for the time being.

Start timing your horse's recovery cycle by the speed at which he repays lost
weight from hard workout to hard workout. When weight is regained, time for
another piece of hard work. Should happen on a 3-4 day cycle.
