I don't know if anyone has mentioned this yet but teeth grinding
is considered diagnostic for ulcers in horses. When we had to put my new
foal on antibiotics last year for a respiratory infection my vet was very
specific that he should be notified about any kind of teeth grinding so
that we could put her on Tagamet or some other anti-ulcer medication as
needed as soon as possible. You should consider discussing his behavior
with a vet familiar with stomach ulcers in horses. They can be treated.

The darker color is a bit of a handicap, one reason perhaps why greys
proliferated in the Mediterranean. Try using a fly mesh sheet on him or
keeping him under shade during the hotter hours. However if he does have
stomach ulcers that would also cause him to drink an excessive amount of
water so this is something that needs to be discussed with a vet.
