3 year old grinding teeth

Hi, all:

Hope you can give me some advice on this problem. Our 3 almost 4 year old,
( the half Quarter Horse mistake I have mentioned before, the clever, bold
guy with the 'make me and I'll consider doing it attitude') has ground his
teeth when we put him under stress ever since....since he has had teeth, I
suppose. For example if one is leading him to pasture and he is being held
back because he really wants to dash out and eat RIGHT AWAY he will drop
his head down and grind his teeth. When I am riding him he grinds
continuously. He's been started very slowly and gently, has been
imprinted, likes humans very much, begs to get out for rides and yet grinds
ferociously the moment a bit is put in his mouth. I've tried bits with
keys, rubber bits, and some exciting rides round the pasture with just a
halter. No difference. At a clinic he went a bit better in a bosal-less
grinding but not eradicated.

I don't mind riding with a bosal for awhile but would like him to graduate
to a bit. Today, at a schooling show, I heard an adult horse grinding away
and it chilled my blood and prompted me to ask everyone for help, despite
this not being a specific-to-endurance question.

Also, this horse is a true black. Mainly in our hot summers, but year
round, I notice he drinks much more than the older, larger horses. He
consumes most water, the big Appy the next greatest amount, and then, I
think, the larger Arab and lastly the thin little Arab. Buddy is the same
height as the littlest Arab but black and more Quarter Horsey in build. Is
colour a real handicap? What do people in the hot states, Australia, and
other really warm areas find? Is the perfect endurance horse white?
