The right side seems good in that the sweat pattern was completely
even, the hair smooth and there were no swelling. The left side was
different, and I am not sure if I have too many shims or whether I
don't have enough and need to add another. The hair was slightly wavey
and the sweat pattern was less.

One reason the sides are different could be the way that you ride.
Sometimes people sit more to one side and although it feels natural
for them, it isn't balanced. I have a tendency to twist my upper body
to the left and pulls my left hip back across the saddle. My left leg
     "hangs on" to the horse.

Trying to fill in 1 1/4 inches sounds like a lot of adjusting to make
this saddle work. I would think that even though it is shimmed that
the points of the tree might still cause problems.
