State Line Tack, and other outlets, sell "earmuffs" which can be attached 
to the harness of your helmut with a leather strap (about $12).  They are 
wonderfully warm and stay well clear of the helmut itself.  Another 
suggestion is to buy one of those knit hunting caps with a face shield in 
a large enough size to pull over the entire helmut.
Be sure to use a wool or Goretex rump rug on your horse at temps. below 
20 deg.  And be aware at those extreme temps. the concussive effect on 
the legs will be dramatically increased!  You'll have to warm up with 
stretches before saddling up and be sure to do enough walking to get the 
tight muscles limbered up before going to an active posting trot.
Post-ride is the riskiest part--you'll need to towel off any sweat and 
perhaps blanket until your horse is completely dry.  And keep out of 
drafts.
