    I too have a mutton withered horse.  Make sure that the shoulder is totally free and that the piece of the saddle that comes forward and would normally sit in that hollow under the wither is well clear, otherwise it will pinch him.  I can't ride Ibn in a GP at all - he let's me know in no uncertain terms that the saddle is hurting him.  The saddle I have is a custom endurance saddle made here in South Africa, so I can't give you advice on the makes of saddles in the States, just make sure of the fit at the shoulder and wither area.
