You might try feeding him O & M (Oat and Molasses) or even A & M (Alfalfa and Molasses--just to get him started) and mixing just a bit of very, very well drained beet pulp in with either.  Then keep changing the ratios until voila:  He'll be eating all beet pulp and loving it.
I did this with a friends horse, using the O & M and within a week she'd acquired a taste for the beet pulp.  She wouldn't go near it at first, now she is crazy about it.
My horse loved the BP immediately.
