I'm getting a bit of a chuckle over this, I really am. (And we always stay 
the night after a ride.) 
I guess all you can do is tell them the benefits of staying, how if they 
cared about their loved one (horse) they would stay for them, etc. How 
expensive the vet bills will be if they make their horse sick, how will they 
pay for them? The horse could die...Beginning to sound like a familiar 
arguement? 
I think most people think it is their right to go home when they see fit 
and would resent anyone controlling their travel plans as much or more than 
their headgear or lack thereof. All you can do is tell them it would be 
better for the horse, and then let them go if they choose.

   That's also why I decided to ask how, instead, riders could be
induced to stay overnight, so that hopefully any problems that might arise
as a result of the additional stress of trailering on top of participating
in the ride could be avoided entirely, or any marginal horses would have
the benefit of the ride vet's being right there to deal with it (assuming
the ride vet, too, could be induced to stay!)
