It's REALLY important with a dish such as this to keep the temperature above
140 degrees for the entire time. This sounds like a recipe for Foodborne
Illness. I work for a local Health Department in WA state and our big
emphasis is correct heating and cooling, and correct holding temperatures.
If the food is not at least 140 dgrees when it is served, it should be
reheated to at least 165 degrees. Haven't heard of any foodborne outrbreaks
at a ride, but it is possible if proper temperature control isn't used.
Fortunately us endurance riders are a tough bunch. jeri
