 I'll skip the long boring biochem lecture, but it's *impossible* to reach a
toxic level from beta-carotene (the precursor form found in carrots, leafy
veggies, pasture, etc).  You can only reach toxic levels by feeding the
synthetic forms of vitamin A, retinol, or by feeding animal tissues which
are high in stored vitamin A, like seal or polar bear liver.  Assuming
you're only feeding carrots, and skipping the synthetic supplements and/or
polar bear liver, you're not feeding too much beta-carotene.
