All these things come with practice. You can't expect a horse to all of a
sudden know that you want him to trot in hand and do it with his ears forward
and happy if it hasn't been practiced hundreds of times before.

You you really think those horses that look so good at BC judging do that by
just doing the BC routine at the time they are standing. Many people,
particularly the ones that regularly win BC end every training ride with a BC
check!

If you want the mare to trot out better, then start working on it and work on
it every day. I think Linda Tellington Jones addressed this very subject in
one of her books or videos and described exercises to get them to trot out
better. But it takes time and practice away from the ride.
