Banana bread/cake/whatever will still have the same amount of potassium
available as the bananas that went into it.  Potassium is an element and
can't be destroyed by heat, mixing with other substances, etc.  The only
thing is that if your recipe called for say, four bananas in a banana cake,
then you'd have to eat the whole cake to get the potassium from the four
bananas.
