Tina - there are two issues - one is getting the water to the vet check (by 
your crew) and the other is offering water to the horse.

The second one is easy - deep enough to hold a couple gallons at least, 
shallow enough so the horse doesn't have to stick it's head in so far that 
it can't see out any more, wide enough so it won't easily tip over, tough 
enough so it can be thrown in a rig to get to many more vet checks.

The first one depends on whether your crew is going to drive in, walk in, 
or share a ride.  If you are of the opinion that crew people are slaves, 
then any old container will do, but if you want to have a crew for more 
than one ride, I'd suggest that any water container that can be moved by 
wheel and has a non-leak lid is a good container.  Lif
