efficient gaits question

I'm not sure practicing the gait is the answer. I have a horse that
will trot or canter on a training ride around home whenever I ask. He
will maintain the canter until I ask for another gait. But at a ride he
will drop out of the canter almost right after we start. I have tried
many times and the same thing happens. So I let him trot, I figure he
knows best what he can do the longest.
