Lauren - I hope somebody with more experience will answer.  I only have two 
horses and so don't have a
lot of experience with getting horses started on multidays.  I did start 
one horse on a three day ride, and the other one on a two day ride.  If I 
remember correctly they were either late 5 or 6, and had anywhere from 300 
to 500 miles on them at the time.

I would take each day at a time....if the horse is fit to continue on the 
second day, then gooooo.....ride and have a good time :).  You may feel 
more comfortable just doing a 2 day ride to start off with.  The horses and 
riders both seem to learn so much on the multidays, they are wonderful 
experiences and a whole lot of fun!

I remember I was so frightened at the first multiday I did - the horse only 
wanted to eat hay!  I didn't know better then and I thought for sure he 
needed to eat more grain.  I think it was Jackie Bumgardner who told me 
that was a good thing, and so of course if she said it was so, then it must 
be.....

Speaking from observation.....take it easy on your first multiday.  You'll 
have a much higher chance of completing if you go slow and ride in the back 
of the pack.  Have fun :)
