This sounds like a sympathetic nerve response.  
If a nerve dies, or is damaged, the nerves in the surrounding
area have a sympathetic response.  (As explained to me several
years ago.) Frequently, the response is to sweat heavily.

You horse may have been kicked, or ran into a post, and damaged
nerves in the area.  The resulting injury may have gone unnoticed
by you.  The sweating may continue for the rest of his life, or
may go away as the injury heals.
