You don't want low blood glucose numbers during the event or immediately
after. Simple sugar is the very best way of quick replenishment of spent
fuels and is important post-race, as I've outlined elsewhere. Grain, on the
other hand, may take some time (2 hours) to achieve a peak blood glucose--and
that's too long for the brain to not issue catabolic commands that may then
endure for 24 to 48 hours.
