Linda,
I've been using John Crandell's cut-out hole-in-the-pad technique all
season with good results. The sole stays dry and concave beneath the
pad and sand and gravel easily work out on their own. Only concern, as
you suspected, came with extended work on sharp gravel roads. At Fort
Armstrong, for example, on the second day of the two-day 100 last
month, my mare would occasionally take three or four off steps,
probably from being "stuck" by a sharp piece of gravel. I would pull
up briefly and she would trot off sound every time. There was no
apparent damage, but I may go to full pads for ROC just to be safe.
