It's really hard to say with any degree of certainty about heartrates. The
best thing to to is take her heart rate (with stethoscope or monitor) many
times in many different scenarios (trotting, cantering, up hill, etc) so you
have somewhere to start.

You really need to know what's normal for her before you can start aiming
for certain rates. Some horses can do an easy canter all day at 115 while
others trot at 125 - really depends on what's normal for your horse.

Recoveries are what you really want to look for - how far and how fast can
she come down after working is where you can really tell how your program is
working.
