One of the things I would want my crew to do that has not been mentioned
is to wet and wring out sponge before mounting up. This way you don't
have a floating dry sponge to deal with esp. if still mounted.
(always put in sponge on string downstream of your horse)

I would also want my crew to wet the hay when I come in , pull my vet
card, refill any water bottles, check horse's feet for rocks, shoes and
legs for swelling and nicks, remove and wash splint boots and reapply,
make note of time in and when I'm due out. Riders that suffer from
baked brains loose track of time, good crew person will remind rider
when getting close to leaving time. Crew person hold horse while in
vetting out line but I feel rider should do the actually trot in hand or
be present for the vet check. Crew person check and tighten tack.
Remind rider leaving of vet card and map. Make changes in saddle bag
appropriate for next leg of ride, ex; pack parka, flashlite, glo bars
for nite portion of trail. There's massage, monitering and cooling of the
horse during time in and the list goes on.

My husband and I have a permanent list for what we pack for ourselves,
our horses, and if we have a crew, a list of crew duties as every rider
may differ as to what they like a crew person to do.
