Diane--
The water bottles holders that I have are made of fairly thin
neoprene. There is a strap that the billet goes through and a snap at
the top to attach to the D rings in the front of the saddle. They
look sort of like those neoprene can coolers. They have a piece of
neoprene that goes over the top of the bottle to hold it in. I don't
attach anything to the breastplate except my heart monitor
transmitter. I haven't had any problems with the water bottles
hurting the horse. I also have a pommel pack that can carry two water
bottles and it seems to be even more secure that the water bottle
holders. I like the holders better than the pack because it is very
easy to get at the water. I got the holders that I have from Sportack
and the pommel pack from the Australian Connection.

My experience carrying water bottles on either side of the breastplate or
attached to the saddle at the pommel (more awkward) has been soreness
developing in my
mare's shoulders and a raised ridge along the line that follows the
breastplate to the center piece. So now I carry the bottles in a fanny
pack--the ones that Teddy Lancaster sells don't jostle or irritate me at
all. I might consider trying to affix a couple to the cantle but given
that I'm not your most flexible person on the trail, I might have a little
difficulty in hooking/unhooking under certain circumstances.
