As I understand the AERC rules, once a horse has been declared to be 
'finished' by the vet staff, it can receive treatment as needed.  This allows 
such things as a liniment or mineral ice brace to the legs, antibiotics for 
wounds, and so on, that are not allowed either prior to or during a ride.  Of 
course, one would hope that a horse in serious trouble would give some 
indication to the vets and not receive a completion, anyway.  Technically, the 
horse that colics for whatever reason after passing a post-ride exam has 
successfully completed the ride.
