The explanation for why anybody would bother to spend all this time doing laboratory work on beet pulp would be the same as the one for thinking that every kitchen should have an accurate digital kitchen scale.

I do all my cooking (which ain't that much because I spend most of my time riding)?in the kitchen from my french cookbook where there is no need for accurately measuring anything since the instructions on amounts say "some" and "to taste."

I don't weigh anything when I'm cooking. ?I weigh *everything* when I'm baking. ?Once I started weighing my ingredients in grams, my chocolate chip cookies went from "tasty" to "best ever." ?Sadly, this resulted in me eating a lot more chocolate chip cookies :(
