It's not the accumulation of data or the value of the data, it's the fact that the national government has made it *compulsory* that sticks in so many people's craws.

Then the same people do not find it to be an issue when every time they
use a credit card, debit card or check all your personnel information
is entered into a database...
No one has made it a law that you HAVE TO use credit cards. You can pay with cash or checks and then no one will enter your purchase (with your name attached) into any databases.

Plus providing to the government (IRS) your checking account
information in order to file your taxes online.
This information is provided to every one to whom you write a check. That is what those numbers at the bottom are... bank routing number and your checking account number (plus the check number).

Or they don't mind all their health information being inputted into
one huge database for all to review.
"All"? Read the confidentiality statement provided by your health care professional. Unless "All" means, your doctors, hospital, insurance company and/or anyone with a legal right to view that information, your health provider would be in a world of hurt (can you spell lawsuit?) if s/he allowed anyone without legal authority to "review" your data.

I would much rather have my animals micro-chipped in case they are lost...
And you may do so. Just do not expect the rest of us to accept that the federal government has the right to force us to do this. Choose? Yes. But without an overriding and pressing reason, required? No.
