My 6th edition of Goodhart and Shils says that
bromelains are "proteolytic enzymes from pineapple
stem".  Some research has been done with pancreatic
enzymes (extracts) and adding bromelains to aid in the
absorption of fats.  Bromelains by themselves were not
shown to improve the fat absorption in patients with
pancreatic insufficiency.

I do not see where they would be anti inflammatory.

I have used pancreatic extracts and plant enzymes,
such as those from papaya fruit to help patients dying
from pancreatic cancer.  It seemed to help them with
digestion as well as, reducing diarrhea.
