Carla,

As a dietitian, I recommend dried fruit on the trail,
as long as you are drinking plenty of fluids, for
carbs.  The peanut butter is not a slow acting carb,
as there is very little carb in it, unless the peanut
butter with sugar is used.  Peanuts are mostly protein
and fat and they help bring up blood glucose, slowly. 
We also know that whole foods bring blood glucose up
in a smooth, slow manner and keep it up there where it
belongs, instead of bouncing it up and down, as simple
carbs and sugars do.  When I say whole foods, I mean
brown rice, potatoes with skin left on, peanuts with
skin left on, whole wheat, whole barley, etc.  The
phytochemicals naturally present in whole foods are
important to cancer and heart disease prevention, too.
So, packing that midday snack takes some thought.  I
like trail mix with nuts, seeds, dried fruit and
chocolate.  A whole wheat sandwich (pbj, honey and a
slice of real cheese doesn't need to be kept cold), an
apple to share with my bud and lots of fluids.

In Arizona, this time of year is our training time. 
The summers are more of a challenge with what food to
take along that will not 'backfire' on us later in the
day.

I will think of you with your gators and mittens on as
I put in 20 miles at a time in my shirt sleeves!!  LOL
